Marshmallow Brownies
Ingredients:
2 Cups of Sugar
1/3 cup of cocoa powder
1/4 tsp salt
2 sticks of butter
4 eggs
1 tsp baking powder
2 tsp vanilla
1 bag of mini marshmallows
For the Frosting:
1/2 stick of butter
1/3 cup of cocoa powder
1/3 cup of canned milk
1 tsp vanilla
2 1/2 -3 cup powdered sugar
Directions:
For the Brownie:
1. Preheat oven to 350
2. In a bowl mix together sugar, eggs, and vanilla. Add in dry ingredients and mix until combined. Pour into greased 9x13 pan and bake for 25 min. Remove from oven and cover brownies with marshmallows and continue cooking until marshmallows are slightly browned. About 7 minutes. Allow to cool while you make your frosting.
For the Frosting
- Add melted butter, cocoa powdered, evaporated milk, vanilla, and 2 cups of powdered sugar to a mixing bowl and beat with electric beaters until smooth.
- Add more powdered sugar, a cup at a time, mixing well, until you reach your desired frosting consistency. I usually use about 3 1/4 cups powdered sugar.
- Spread frosting over the cooled brownies and cut into squares. I've found a plastic knife works best to cut them, or if you make them 1 day in advance they are much easier to cut.
If I am feeling lazy, I will just use a box mix brownie and do the rest the same
