Jalapeno Jelly

Jalapeno Jelly
Makes 6 (1/2 pint) bottles

Ingredients:
3/4 C Green Pepper
1/2 C Jalapeno
6 C Sugar
1 1/2 C Apple Cider Vinegar
1 6oz Packet of liquid pectin
3-6 drops of liquid green food coloring

2-3 Tbsp fresh lime juice

Directions:
Puree peppers in blender with part of the vinegar. Clean out the blender with remaining vinegar. Pour into sauce pan and add sugar. Bring to a boil. Boil 1 minute and simmer 5 minutes. Let cool about 2 minutes before adding pectin, lime juice, and food coloring.

Skim to remove foam. You can strain it if you want clear jelly.

Place in bottles. Process in a hot water bath for 5-10 min. Let cool for 30 min.
